HI, I'M AMBER
The idea for Preserva Maui started in my early 20s with a simple craving: a fresh blueberry mojito while backpacking. I’ve always lived for the outdoors, but as a camper, I noticed the market was missing a way to enjoy a real, high-quality cocktail without the weight or the mess of fresh produce.
I spent 17 years behind the bar, working in hotels and restaurants where I saw incredible amounts of waste every single day. I knew there had to be a better way to bridge the gap between "fresh" and "functional." I realized that freeze-drying was the answer—it was the only way to keep the fruit real and the flavors vibrant while making the final product shelf-stable and light enough to take anywhere.
What started as a mission to help bartenders reduce waste and create a better cocktail mix has transformed into something much bigger. Now, I see how much this island needs sustainable solutions. From providing freeze-drying services for local farmers to ensuring our community can preserve its incredible produce, there are so many ways this technology can benefit Maui.
I am a bartender at heart who wanted to create something fresh and real that you can bring with you into nature. This is a journey of discovery and sustainability, and I’m so glad you’re joining me on it.
THE PROCESS
The freeze-drying process is where science meets the spirit of the island. Unlike traditional heat-drying that can "cook" away the good stuff, we use a specialized vacuum process to gently remove moisture while locking in 97% of the original nutrients, color, and—most importantly—that fresh-muddled flavor.
The result is a lightweight, super-concentrated crunch that tastes just as vibrant on a remote ridge line as it does behind a high-end bar. It’s the ultimate way to capture Maui’s harvest at its peak and make it adventure-ready for whenever you are.


THE VISION
At Preserva Maui, we are building a future where "fresh and real" isn't limited by a shelf life or a refrigerator. What began as a bartender’s quest for the perfect backcountry blueberry mojito has evolved into a mission to change how our island preserves its resource.
I hope for a Maui where freeze-drying is no longer just a luxury, but a community staple that empowers local farmers, eliminates hospitality waste, and fuels every adventure from the coastline to the crater.
